white wine, clam chowder / with pear:
salt pork / bacon
(or any fruit you adore)
sauté slowly ~ the bacon / salt pork, onion, shallots, and finally, potato,
(take your time, have some wine)
deglaze w/ white wine (half a bottle or so) adds lots of flavour.
at a boil, add your fresh clams, once they pop open, remove them fast,
and put aside.
add more wine and or water, and let simmer down, to a creamy mush.
i added sea salt, fresh sage, ground cayenne pepper, filé (ground sassafras leaf)
then stir in butter, add some flour, then cream
(however much, you want it).
then, at last, add your sumptuous clam meat,
and serve it forward
